Kratorn Kranita

A dish inspired by My Grandmother,

The Greatest cook I know…

At 96 years old.. She gently inspects the kratorn and only selects the softer ones that has been left for a few days. Sitting opposite her as she slowly peels the Kratorn and gently plunges them into salted water. They are then thinly sliced and left to float in a light syrup. My grandmother usually portions each one and places them into the freezer for us to enjoy on a hot summer’s afternoon. They are left outside for a few minutes to lightly thaw and then we used to dig them up with our spoons, such fond childhood memories of our remarkable time together.

Wagashi goes hand in hand with Matcha, the guests enjoy the beautifully crafted sweets prior to the intense experience of the Koicha to come. The both contrast, while at the same time compliment each other perfectly. There is a lot of things we can learn about Wagashi, it teaches us to be modest, although exquisite, as they rest quietly next to the matcha bowl. Seasonality is also a theme that is well highlighted, with the changing of the seasons comes a specific Wagashi to suit, being one with the rhythm of nature. But most importantly we start to realise that a bowl of tea and just a small piece of confectionary can be so much more than what meets the eye.
