Concept

Every drink starts with a concept. Inspiration can come from anywhere, the possibilities are only limited by your imagination. It could be a the whiff of an alluring scent, a memory, an exotic ingredient, a historical event, a visual cue, or even a dream.

Research

Slowly piecing various fragments together to form a complete picture of a specific time and place, vital to recreating an accurate depiction. Looking through recipes from bygone eras to recreate flavour profiles.

Ingredients

Sourcing unique, rare, organic, artisanal produce is key to success. Every drink lives and dies by the quality of its ingredients. So vital is this step, the drink does not proceed until the most suitable ingredient is obtained.

Development

This process can take days, weeks, months, even years to come to a final outcome, as every possibility is throughly explored. Various drinks are set aside, but never forgotten, as it may spring back to life again at any moment.

Refinement

Through the lens of abstraction, every detail is reduced to its essence through a rigorous process, without retaining any superfluous elements. The key is to make the drink look as effortless as possible.

Presentation

The drink is presented at its peak and simply becomes a trace of the journey taken in its creation, while still capturing the elusive initial idea. Visually, it needs to be as simple as possible, reducing to its bare essence. Perfection by means of subtraction and rather than addition.
